It’s around this time of the year when we start to look past heavy meals and go for something a little lighter, a little healthier and a whole lot tastier. Maybe it’s the that pair of bikinis sitting in the bottom draw about to come out, or the fact that the new year with its plethora of resolutions is any day now… whatever reason it may be, this oh so good recipe from Nutritionist, chef and TV presenter Zoe Bingley-Pullin ticks all the boxes.
Now before you say ‘avocado doesn’t belong in a soup’ I have to interject because, yes, yes it does and once you taste this you will see why. The textures, the flavours and the nutrition benefits will win you over, I promise!
I also love the usage of the Oat and Almond Milk (Vitasoy) which again complements the flavours while allowing you to enjoy the taste of almond with the nutritional benefits from oat milk. Made with Australian grown almonds (cold press oil) and Australian oats which actively lower cholesterol. Its also naturally free from lactose, dairy and cholesterol, non-genetically modified and high in fibre. Not bad right?
And the prawns? Well nothing feels like Christmas to me more than prawns do, so be sure to make extra to impress your guests. The unsaturated fats in prawns can help improve your blood cholesterol levels when you eat them in place of saturated or trans fats, and like other fish and shellfish, they are also a good source of omega-3 fatty acids (essential fatty acids your body does not produce). The omega-3s can reduce inflammation and your risk of heart disease, cancer and arthritis, as well as help with brain function. Again, #winning.
Spicy Prawn & Avocado Summer Soup
Prep time: 15 minutes
Cooking time: 5 minutes
Serves: Approximately 4-6
2 avocados, pips removed
400g of cooked prawns (shell removed)
2 cups good quality chicken or vegetable stock, home made is always best or buy a good quality product if buying a commercial brand, salt reduced
2 cups Vitasoy Oat and Almond Milk
1 cup of unsweetened organic plain yoghurt (can use goats yogurt too)
1 tsp fresh chilli, chopped finely
2 tsp cumin powder
2 tsp coriander powder
1 tsp of honey
1/4 of a cup of fresh coriander, washed, stems removed, finely chopped
Sea salt and pepper to taste
In a food processor or blender (fyi you don’t have the buy THE most expensive blender there are so many awesome ones out there (like here) which sit at a good price point) , add all of the ingredients, except the prawns, and blend until smooth.
Pour mixture into a saucepan and heat to room temperature. Simmer on a low heat for approximately 5 minutes.
Serve the soup in a bowl with the cooked prawns, a little coriander and yoghurt on the top.
